The truth about dietary cholesterol

Thanks to some long-standing bad science , there’s a persistent misconception that foods high in high-cholesterol will raise blood cholesterol levels. However, a growing body of research is showing that dietary cholesterol (the cholesterol in foods) may not affect the cholesterol that is in your blood. Researchers are beginning to understand in greater depth that the relationship between cholesterol and the body is extremely complicated and that it may be genes that determine cholesterol levels. People process cholesterol differently, so some people may be more vulnerable to cholesterol-rich diets, while others are not. In fact, studies suggest that only about 30% of people are particularly susceptible to the effects of dietary cholesterol on blood cholesterol levels.

What does this all mean for you?

Simply, it means you should go ahead and enjoy foods such as eggs, shell fish, full-fat dairy products and grass-fed beef in moderation. While high in cholesterol, these are also among the healthiest and most nutritious foods out there.
